The gift of choosing the olives that will produce the famous oil is passed down from generation to generation in a secret process that has not changed for over 5000 years. 15 kilos of olives are needed to produce 1 liter of our oil and only 150 kilos of olives from our AL-BADAWI olive tree are selected at each harvest. Respecting the selective process that discards any deteriorated olive that would suffer from oxidation, as well as a compulsory colour and size, only about 10 liters of extra virgin oil can be produced with each harvest from the olives of the AL-BADAWI olive tree.

Our olive grove is located in Al-Walaja, near Bethlehem, in the holy land. The Beit Jala valley is known worldwide for the quality of its olive trees and olive oil. The variety of our olive is the famous HUWARI. Because of its exceptional age, AL-BADAWI gives its fruits the strength and ingredients in ideal quantities when ripe. AL-BADAWI gives to its fruits the strength that has allowed it to face more than 5000 years of history in a world with its climatic and environmental changes. AL-BADAWI olives are bigger and taste very different from all other olives of the same variety and from the same area.
